The Low & Slow Simmer: Birria de Res

Birria is a celebratory Jalisco heritage tradition built around the slow passage of time. Traditionally a slow-braised goat dish, the modern beef version adapts the same patient methodology. It transforms tougher cuts of meat into a velvety, melting masterpiece by steeping it for hours in a deeply concentrated, aromatic pot of chiles.

The Blueprint:

  • The Braise: Beef shank and chuck roast simmered low and slow for hours with toasted guajillo chiles, garlic, cloves, and Mexican oregano until it shreds effortlessly with a fork.

  • The Consommé: The rich, amber-hued, highly concentrated spiced broth left behind in the pot, skimmed for its rendering surface fats.

  • The Shell: A corn tortilla dipped directly into that spiced surface fat, thrown onto a hot flat-top grill until it fries to a deep crimson crunch, stuffed with the shredded beef, and served with a cup of hot broth for dipping.
